There’s nothing quite like a bowl of homemade soup to make everything feel a little cozier. This Creamy Vegetable Soup is one of those recipes you can whip up on a busy weeknight in less than 20 minutes! Yes, that fast!
Bonus: it’s made with simple pantry staples you probably already have — mixed vegetables, chicken broth, flour, and butter! This soup delivers rich, comforting flavor without any fuss. Serve it with warm bread, a grilled cheese sandwich, or enjoy it all on its own for the perfect feel-good meal. We served it with grilled cheese, and it was delish!
The only thing I would say is to double the recipe if more than 2 or 3 are eating it, because you can’t help going back for seconds!
For all the parents trying to get their kids to eat veggies, this is a great way to do it because once blended, they won’t even know what veggies are in it!

4 tablespoons butter
1/4 cup flour
1 teaspoon garlic powder
1 teaspoon onion powder
3/4 teaspoon salt
1 teaspoon black pepper
15 oz chicken broth
1 can mixed vegetables, drained
1 cup half-and-half

Start the base: Melt the butter in a medium saucepan over medium heat.
Make the roux: Whisk in the flour and cook for 1–2 minutes, stirring constantly, until smooth and slightly golden.
Season it: Add garlic powder, onion powder, salt, and black pepper. Stir to combine.
Add broth: Slowly pour in the chicken broth while whisking to avoid lumps.
Add veggies: Stir in the drained mixed vegetables. Bring the soup to a gentle simmer.
Make it creamy: Use an immersion blender or pour into a blender and blend to the desired consistency. Pour in the half-and-half and let the soup thicken for 3–5 more minutes, stirring occasionally.
Serve: Taste and adjust seasoning if needed. Ladle into bowls and enjoy warm with grilled cheese or warm bread!
I made this while I had a bad cold, and it was the perfect comfort food! Husband says we will definitely be adding it to the rotation.
