Kid-Friendly Weeknight Meals

I’ve learned that if I make something new, as long as there is cheese on it, I can at least get my 3-year-old to try it. Sometimes I get lucky, and he says, “this is good!” However, there are times he still doesn’t like it. Our rule is, as long as you try it, you don’t have to eat it if you don’t like it.
We are moving into our new home soon and will have a dining room with a table that our family can sit down at for the first time. I could not be more excited to cook in our new kitchen and have family dinner with my husband and boys!

Once or twice a week I will ask him what he wants for dinner. Giving him the option makes him excited to eat what we are having. I thought I would share some of our favorite kid-friendly meals that are easy but that we also love and try to incorporate throughout the month!

#1 would definitely be PIZZA

My husband makes the best homemade dough so we keep a small piece of dough out so our toddler can make his own pizza. He and his daddy like more toppings than I do.

#2 is TACOS

We love various forms of tacos in this house. Chicken and ground beef. Sometimes we do refried beans (toddler fave) and the rest of the time we do black beans. As long as he has cheese, sour cream, and tomatoes, he eats them really good and tacos are an easy meal!

#3 is BURGERS

One thing about toddlers, is they will eat anything with ketchup! My husband makes the best smash burgers! Luke and I love to top a patty with cheese and dip it in ketchup (we don’t put ours on a bun).

#4 is CHICKEN & RICE

We love grilled chicken and flavored rice for an easy weeknight meal. I know Luke will eat it and he’s picky about rice but loves the flavored rice. He calls this meal, “chicken and ketchup.”

#5 is NOODLES

The great thing about noodles is you can make so many different things. We do chicken and noodles, noodle casserole with ground beef, or stroganoff with roast!

 
 

There are lots of options, these are just some of our top ones that I know Luke will eat without issue. If you have a toddler, you know how nice it is to have a staple meal they will eat without a fight! I’ve found when we make our cowboy rotel, he doesn’t eat it like nachos, he just eats it with a spoon because its sausage and cheese. Ha!

Don’t be fooled, we have been known to have cereal for dinner. If you are looking for especially easy, cereal is the way to go. Contrary to what commercials portray, it’s not just a breakfast food. In our house it’s breakfast, dinner, or snack.
